The Midland Counties Dairy was one of the country's
leading suppliers of dairy products. Recipes using the
company's products were often published as a way of
boosting sales. The following recipes are taken from
issue number 100 of the dairy's staff magazine, "The
Dairymaid", from 1937. |

You will note that the first recipe uses raw eggs,
which is frowned upon these days because of the
prevalence of salmonella. In the 1930s this was unheard
of.
