The Midland Counties Dairy was one of the country's leading suppliers of dairy products. Recipes using the company's products were often published as a way of boosting sales. The following recipes are taken from issue number 100 of the dairy's staff magazine, "The Dairymaid", from 1937.
You will note that the first recipe uses raw eggs, which is frowned upon these days because of the prevalence of salmonella. In the 1930s this was unheard of.
