Very Good Winter Salad
Ingredients |
1 egg. |
0.5 teaspoonful pounded
sugar. |
1 teaspoonful salad oil. |
2 tablespoonsful vinegar. |
1 teaspoonful mixed mustard. |
6 tablespoonsful cream. |
0.25 teaspoonful salt. |

Mode. Boil the egg till
hard, then put it into cold water, and remove the shell. Pound
the yoke in mortar to a smooth paste, add to it all the
ingredients (except the vinegar), very gradually and stir till
well mixed. Then pour in enough vinegar to make it a cream-like
consistency, taking care to add but little at a time. Lastly add
a little milk or cream carefully mixed. Almost any boiled
vegetables (except greens), can be used for the salad, as
celery, onions, leeks, cauliflower and potatoes. Place them in a
salad bowl in layers, and baked beetroot should be placed all
over the top of the other vegetables. The salad mat be garnished
with lettuce, cress, or radishes if liked.
